I would be willing to bet the overall population of rats in DC has remained steady. They have good noses, though. Of course they were attracted to all the food smells!
Even on Fifth Ave between 59th and the Met I’ve seen many rats between 3:00 and 5:00 AM. I’ve even seen them lurking around the Central Park Zoo in broad daylight. Even the 1 percenters have their share of vermin.
Rats, cats, squirrels, mice, bats…who cares? Properly dressed, combined with vegetables, seasoned and braised, they all taste pretty much alike: a delicious stew whose broth can be strained and recycled for a bracing winter soup. Sort of like chicken.
